I'm struggling to adjust to the workload in my engineering major and I'm worried I'm not cut out for it. I've always been interested in math and science, but I didn't realize how challenging engineering would be. I feel like I'm constantly studying and working on projects, but I'm not seeing the results I want. I don't want to switch majors, but I also don't want to fail out.

It's important to take breaks and not burn out while studying engineering. Make sure to find a healthy balance between work and self-care.
Have you considered finding a study group or a tutor to help you with the material? Sometimes it's helpful to have others to bounce ideas off of.
